Buddha bowls are a recent trend that I absolutely love, especially when they're vegan, healthy and delicious! The best thing about it is that they're super easy to make, you just have to choose a base, add your favourite veggies and have fun with some toppings. Buddha bowls are bright, colourful, nutritious and satisfying. You get a meal full of protein, nutrients and vitamins, good for your belly and also for yourself.
For this recipe I chose rice noodles as the base and then I added some of my favourite vegetables: carrots, mushrooms and asparagus. But you can add the veggies you want and make it your own way, have fun!

ingredients - makes 2 buddha bowls
2 portions rice noodles
20 baby asparagus
1 cup baby mushrooms
2 carrots
1 tbsp soy sauce
1 tbsp coconut oil
a pinch of salt, black pepper and rosemary

toppings
1 tbsp peanuts
1 tbsp sunflower seeds

how to make
Preheat a pan with coconut oil and place the asparagus. Let it cook for 5 min and then place the baby mushrooms. Season everything with a pinch of salt, black pepper and rosemary. Turn it off after 5 min.
Place the rice noodles in a large bowl with boiled water and let it be for 2 min. Remove the noodles from the water and place in a heated pan with a spoon of soy sauce.
Peel the carrots and use the peeler to cut thin strips.
Place everything in a bowl, add peanuts and sunflower seeds.
